So I was going to post the recipe for mince pies then I stumbled upon this site 'An Englishman in America' Which along with the recipe, also gives an explanation to what mince pies are! How fabulous is that. (Side note: I don't use lard with mine, I only use butter, so I use 40z butter instead of 20z butter, 20z lard)
The mince pies I made yesterday resemble the ones in the photo here. (You'll just have to believe me that they looked like those, nothing last five minutes in our house especially if it is edible!)
They are best warm, served with Brandy butter mmm mmm.I do think that website will explain better than I can ever do, especially today as I seem to be out of sorts and very vacant and dreamy!
A long time ago, I was looking at a magazine (I am addicted to home decorating magazines, I especially love 'Country living') and there was an article on a woman called 'Mandy Shaw' and her home, and it was one of those homes I absolutely love, full of patchwork quilts and homemade bears and dolls, and she had her own sewing room (something I would like) and I have kept those pages for years, along with others, kept for inspiration. And every so often I'll find them and think 'oh I would love a house like that!' (Something I often do when I look at blogs!) Anyway there is a point, today was such a day, I found my old magazines and was looking through them and I thought I would check and see if she had a webpage... and she does, and she sells patterns! Imagine that! I was over the moon! Check it out here 'Dandelion Designs'
This is one of the first patterns I will be buying! And I especially love the Redwork designs.I have nearly finished my 'Edith Flack Ackley' Alice doll. I just can't seem to get motivated to make her apron, but I am determined to have her finished by next week! And I promise I will take pictures and I will post them!

Are you sure your mince pies looked like that?
And thank you for your suggestion, but mentioning Christmas cake to a woman who has just used the last of the eight pounds of mincemeat she made in December is not a good idea!!
