Bara brith.
So because Christmas was so hectic and I never got around to making any fruit cake or mince pies (only in January) I decided to use up the bag of dried fruit I had in the cupboard. Looking through 'Country living' I came across the recipe for Bara Brith (welsh tea bread/speckled bread) and it required a 500g bag of mixed dried fruit and peel, exactly what I had. In fact I had everything in the cupboard that I needed. So on Friday night I soaked my 500g of dried fruit and peel in 300ml of very strong tea, overnight.
That is my fruit soaked overnight in strong tea! (the fruit was lacking a lot of the dried pineapple that was in it, because, well because I love dried pineapple, I cannot resist!)
Then I Sieved 250g of self raising flour and a teaspoon of mixed spice (ground) into the tea soaked fruit, (without draining the tea from it) and gave it a really good stir, added an egg (beaten with a fork beforehand) and 125g of light brown muscovado sugar (the recipe calls for dark muscovado but I only had light in) and gave it a good mix.
I heated the oven to gas mark 2 (150 degrees C, or 130 degrees F) greased and lined a loaf tin put the mix in it, and put it into the oven.
I kept my fingers crossed for an hour and a half while it baked. Checked it with my lovely cake tester my son got me for Christmas, and put it back for another ten minutes. Took it out of the oven again, checked it another five million times just in case it was pretending it was done. Then tipped it out onto a wire rack and... was actually quite pleased with how it looked.
Apparently you should leave it a couple of days to become more rich and gooey, (in this house thats not going to happen) and serve with salty butter.
I have a very limited sense of smell and taste so unfortunately I cannot tell you what it tastes like, only that it has had rave reviews from the kids, my neighbour, a friend and my parents (my dad loves bara brith and was very impressed with my effort). Suffice to say after all that testing, there are only two slices left.
Tea and cake anyone!

Hi Jennie,
Please can you save me a slice of that welsh tea bread ?!!. It looks delicious & perfect too.
That Alice doll is excellent how very clever you are.
I just noticed to that we share the same tablecloth too!. I bought the blue one and wish I had bought a pink one as well. I did buy the matching dustpan & brush & broom too!!oh and tea towels!.
Enjoy the cake x dominique
Looking good!
That looks delicious. Funny I got the baking bug this weekend too.
I make something similar...called Barm Brack. (soak in tea overnight..etc) ... We love it...nobody else seems to like it much. I always put in a lot less fruit and raisins than called for and add some cranberries...cuz I likes 'em.!
Hi jennie thanks for the reply , that was a good idea about the town thing. It is so hard sometimes especially when they say oh so & so is allowed to do this or go on there own. Also I expect secondary school is quite different lots more pupils & not quite as shelltered as primary school. In my daughters school at the moment there is only one class to a year. It is very sheltered. I think I will do the same as you and set some boundaries. I find it hard as it all new to me , gone are the days of playgroup & wanting to have tea & cakes in the back garden blowing bubbles for her!.
Cant beleive she had a boyfried up till last week(it was ok though as they didnt speak to each other !, a lot like being married sometimes !!!!!!).
There are so many dangers in life and as parents we worry a lot & i guess we always will. I find with my daughter she wants to do everything now Girls aloud concerts ! etc etc
Thanks jennie x
Hi Jennie,
I had to laugh at the comment you left on my blog . . .I'm definately going to end up more Margaret Rutherford than Joan Hickson too! I've been looking at all your list of favourite films - i love all those too and you've listed some I've never seen so I'll have to seek them out! To be watched with a big box of Rose and Violet cremes naturally!
